Most recently I found that the red protein in blood – haemoglobin – is damaged all the time. About 0.1% of it (1 in 1,000 molecules) is an inactive green colour. Studying this is helping me see how haemoglobin can be toxic sometimes, especially when red cells explode and release their contents.
